Michael O'Donnell's inspiration for MiPan came from observing how barbecues and commercial char grills drain fats into the coals. He wondered if this process could be designed into a compact cooking surface for home use. The result is MiPan, a two-layered grill pan that traps unwanted fats produced during the cooking process.
The base of MiPan is similar to a standard grill pan. The unique feature is the removable insert that fits between the ridges, creating a cavity underneath. This insert allows liquid to drain into the base of the pan while cooking, separating the drained liquid from the food. The insert can be lifted at the end of cooking, providing a resting place for the food that prevents it from cooling too quickly.
Made of aluminium with a non-stick coating, MiPan offers even heat distribution, a significant improvement over the standard cast iron. The insert has silicone handles for safe handling when hot, and the base features an induction plate as standard. The pan can hold up to 125ml of liquid under the surface, efficiently removing excess fat and liquid for leaner food cooked at lower temperatures.
The design process for MiPan began in England in August 2009. After extensive research and multiple prototypes, the final working model was completed in August 2012. The project faced challenges in creating a surface that could drain liquids effectively without compromising functionality. The result is a grill pan that not only reduces the mess associated with cooking but also promotes healthier eating.
